EVERYTHING PUMPKIN

The house is decorated and the mums are all planted. The smell of autumn is present in the air. This is my favorite time of year! Every fall season, I look forward to making pumpkin recipes. 

One recipe I must do every fall season is a creamy, hearty pumpkin soup. It is a special treat for the whole family since I only make it during the fall season. 

This soup is so filling that I would just have this for dinner with a piece of bread. 

I love the smell and creaminess of it. 

I’m not going to fuss and scrape a pumpkin ? — better yet I’ll make my life easier by just buying a can of pumpkin purée. Trust me, the outcome is still so flavorful!

It’s easy, it’s delicious, and I hope you try it at home.

Creamy Pumpkin Soup

Ingredients
  

  • 1/4 C Butter
  • 1 clove garlic minced
  • 1/4 C Onions chopped
  • 2 tsp Brown Sugar
  • 14.5 ounce Chicken Broth
  • 1/2 C Water
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 15 ounce Canned Pumpkin Purée
  • 12 ounce Evaporated milk
  • 1/8 tsp Cinnamon powder

Instructions
 

  • Melt butter in a saucepan. Add onion, garlic and sugar.
  • Cook over medium heat 1-2 minutes or until the onion is softened. Add broth, water, salt and pepper. Bring to a boil- stirring occasionally.
  • Reduce heat to low. Cook for 15 minutes, stirring occasionally. Stir in puréed pumpkin, evaporated milk and cinnamon. Cook 5 more minutes. Stirring occasionally.
  • Serve warm and enjoy ?
