Add potatoes to a large pot of water. Let potatoes boil for 20-25 minutes, or until a fork can easily be inserted
Drain and cool potatoes
Once cool, remove skins of the potatoes and mash potatoes
Add salt and pepper
Add 1 egg and combine it with the potatoes.
Knead the dough: Add flour until the dough loses stickiness and becomes a solid mass.
Slice dough into 4 parts, take one part and roll it out into a long rope, about an inch wide.
Using an overturned fork, slide each gnocchi square over the fork prongs till they look like a corkscrew.
Boil a large pot of water. Add salt. Once boiling, add gnocchi. Remove them as soon as they float and transfer them to a pan with your preferred sauce. Since my family loves my marinara sauce, simply- I add a hefty serving of warm sauce on top of my gnocchi. Serve with love.
